We are looking for Line Cooks for our Fleetwood Restaurant opening. This a great opportunity to be part of a team in helping open a restaurant, and set the foundation for award-winning food at a brand new, multi-million dollar restaurant in Napa Valley.

From award-winning restaurant designer Chris Sheffield of SL Designs, The Fleetwood Restaurant is set to open in mid-August on the grounds of Calistoga Motor Lodge and Spa.

With a relaxed casual vibe, in the spirit of the award winning and acclaimed Calistoga Motor Lodge and Spa, we do Napa differently. The restaurant is designed for communal, shared dining experiences, with creative freedom to develop an accessible, well-executed but focused menu that appeals to our targeted customer – using the best regional ingredients available. Craft cocktails, local beers, and of course wine, will compliment your menu. Did we mention an on-site micro-brewery? We’re building that, too.

The restaurant features indoor-outdoor dining, private dining rooms for corporate meetings, weddings, and events, two wood-fired Mugnaini ovens, and seating for up to 152 guests. Our location, at the end of the Silverado Trail, is home to Calistoga’s storied mineral pools and our very own Moonacre Spa. Wellness, wine, and great food? We’re checking all the boxes.

The restaurant will open to hotel guests and locals alike—whether grabbing a seat at our open kitchen counter as the action unfolds, or sharing a meal in our dining room. The restaurant will also provide pool service and host both corporate events and social parties

As Line Cook you will prepare food for restaurant, banquets and special functions, meeting hotel standards of production quality and quantity.

Essential Experience/Aptitudes:

Fluency in English (written and verbal) is required
Must have High school diploma or equivalent.
Some food preparation experience or training preferred.
Must be familiar with proper use and maintenance of relevant kitchen equipment and machinery.
Must have thorough knowledge of proper use and storage of all relevant kitchen tools and equipment.

Desired Skills/Experience:

Must be organized, efficient and meet high quality standards for service.
Good team player.
Excellent interpersonal skills and the ability to work well with co-workers and the public.
Possess a courteous, friendly and professional manner.
Able to work productively with little supervision.
Must be able to multitask in a high pressure environment.

Essential Physical Abilities:

Frequently required to handle and move objects weighing up to 40 lbs. over short to moderate distances.
Pushes, pulls, bends and lifts to perform routine job tasks.
Must be able to work well at a very fast pace, under pressure.
Working environment may be moist, warm and odorous from cooking foods.
Kitchen floor may be slippery from moisture and grease.

Essential Job Functions:

To follow all specifications to properly and efficiently prepare and present all food items to be served, including accommodating special guest requests.
To follow all specifications to properly and efficiently prepare hot foods, side dishes, and specialty items for employee meals, using left-over food from special functions as much as possible.
To follow all specifications to properly handle all product used in hotel cooking, including trimming and cutting; marinating; and covering, labeling, and storing functions.
To assist, as directed, to prepare food for banquet functions.
To ensure proper portions of meat, fish, poultry, as specified, are served to each restaurant and banquet function.
To personally ensure the quality and quantity, as ordered, of all meats, fish, and poultry delivered to the hotel.
To take daily inventory of all items in the meat cooler and fish storage reach-in, and assist, as directed, to order stock.
To rotate food in refrigerator to minimize waste and spoilage.
Work to high standards of cleanliness and sanitation.
To maintain internal cleanliness of iceboxes.
Monitor and report food waste and equipment issues.
Assist, as directed, to order food supplies.
To follow all specifications to properly set up hot or cold line stations.
To follow all company policies and procedures.
To immediately report all suspicious occurrences and hazardous conditions.
To maintain the cleanliness and safety of work areas at all times.
To conduct departmental safety training for all new Kitchen employees, before they begin to work
Follow all company safety standards, including proper equipment handling to avoid injury to yourself and others.
To attend all mandatory meetings as directed.
To perform other tasks, including cross-training, as directed.
