Program Description

Journey Academy is dedicated to providing education and trauma-informed services to high school aged youth experiencing emotional and academic challenges. We provide a safe, therapeutic environment specializing in a relationship-based approach that embraces each individual’s unique strengths.

Position Summary
Journey Academy has an opening for a full time Culinary Specialist. TLC is looking for an individual who has experience working in the culinary field, including but not be limited to planning, organizing, and serving healthy meals; maintaining facilities in a clean and sanitary condition; and working with high school aged youth from diverse backgrounds. This position is based on Journey’s school calendar.

Qualifications

  • A minimum of a high school diploma is required/college degree preferred.
  • Experience in the food service sector is necessary. This may include restaurant experience, catering or other hospitality experience that involve the preparation of food.
  • Valid CA driver’s license and the ability to pass a criminal history background check, drug screen and physical.
  • All employees will be required to familiarize themselves with a variety of written material that coincides with TLC Child and Family Services professional standards, philosophic orientation toward youth and their treatment needs

Skills

  • Ability to stand/walk for prolonged periods of time
  • Understand and carry out oral and written instructions.
  • If not certified, ability to obtain Appropriate Food Handlers Permit/ServSafe Certificate preferred.
  • Knowledge of computers, including Microsoft Word, Excel, and Internet navigation including the ability to communicate via email.
  • Ability to support existing agency policies, maintain confidentiality in all matters of agency operations including clients, resource families and employees.
  • Ability to maintain appropriate professional relationships with all staff. Ability to work in a team-decision-making process.
  • Ability to relate to students and respond to their needs.
  • Ability to take direction.
  • Ability to make decisions and clarify vague concepts, sometimes in a crisis situation.
  • Ability to exercise good judgment in performance of duties and responsibilities.

Essential Functions

  • Prepare daily lunches for roughly 35 students attending Journey Academy
  • Maintain a clean and sanitized kitchen and comply with mandated food safety guidelines.
  • Shop for all necessary supplies and manage the budget and reporting mandates.
  • Cleans utensils, equipment, and the storage, food preparation and serving areas for the purpose of maintaining sanitary conditions.
  • Cooks food for the purpose of meeting projected meal requirements and mandated nutritional requirements.
  • Estimates food preparation amounts for the purpose of meeting projected meal requirements and minimizing waste.
  • Implements menu plans for the purpose of meeting students’ mandated daily nutritional requirements.
  • Inspects supplies to verify temperature, quality, quantity and specifications of orders and/or complying with mandated health requirements.
  • Prepares documentation for the purpose of providing written support for menu production, inventory and quality control records (HACCP).
  • Reports equipment malfunctions for the purpose of maintaining equipment in safe working order.
  • Responds to inquiries of students, staff, and/or the public for the purpose of providing information and/or direction regarding food items.
  • Orders and stocks food, condiments and supplies for the purpose of maintaining adequate quantities and security of items.
  • Communicates and coordinates with other departments regarding food services, needs, and nutritional needs.
  • Directs students as assigned for the purpose of assisting individuals to perform their functions in a safe and efficient manner.
  • Helps supervise students for the purpose of maintaining proper lunchroom behavior.
